Istanbul residents are obsessed with view. When buying or renting homes, going out at night, dining, munching at a cafe a good view would affect their choice. And they would be right as Istanbul offers wonderful views from many different locations.
If you are directly on the Bosphorus a view is obvious but if you are further inland it is a nice relief from busy city atmosphere to sip frozen drinks in summer or a warm chocolate in a cafewith view during winter.
In summer especially during full moon, the cafes in Galata and Beyoglu area offer wonderful views of ships crossing the Bosphorus bathing in moonshine over the sea extending towards Marmara.
Even when you are directly on the sea, for example in Bebek a cafe that is second floor provides a much better view. There are many other places in both sides of the Bosphorus which offer a good view. Some of the major ones are:
Istanbul modern is a small musuem with a permanent Turkish painting collection along with exhibitions by artists from around the world. In addition to visiting the only Modern Art Museum in Istanbul, you may also drink at the museum cafe offering best views of the Old town harbour and the Asian side. (In summer cruiseships docked right in front may block your view)
Walk to Salacak from Uskudar. This is the best view of the Old Town, you would see pictures taken from this direction in many guidebooks and Istanbul movies.
In Buyukada one of Prince's Islands, Hagia Yorgi church ground and the adjacent rustic restaurant over both the Marmara sea and the Asian side of Istanbul
Cape Fenerbahce is a park in Asian side of Istanbul. In spring and summer you many see many married couples having their pictures taken inside the park and towards the sea.
Yoros Castle in Anadolu Kavagi are among a would-be exhaustive list of places with wonderful views over Istanbul.
